Food from the Fields

Takayama has an inland basin type of climate and so there is a great difference between the winter and summer day and night temperatures, while the humidity is relatively low. As the area is blessed with a plentiful catchment area, fruit and vegetables suited to this climate are widely grown. These include spinach, tomatoes, apples, and peaches. Because the Hida area suffers from long snow-bound winters, and few vegetables could be harvested during the spring and early summer, the people of older generations used to dig holes in the fields or in the snow, and used them as natural storage rooms for vegetables during the winter months.
